Fruits & vegetables are Fried under vacuum conditions and at a relatively low temperature about 80 to 90 degrees centigrade (Conventional frying is done at 170 to 190 degrees centigrade.) Oxidation of food is prevented during frying since it is done at near vacuum condition. Vitamins & micro nutrients are well preserved, more over the color, taste and aroma are also well maintained since frying is done at low temperature. The oil content of vacuum fried items, such as chips is very low compared to conventionally fried chips.
